Better Butter (adapted from Laurel's Kitchen by Laurel Robertson) 1 cup light olive oil or safflower oil 2 sticks organic butter softened 2 tbsp water 2 tbsp dry milk (optional) 1 tsp lecithin powder or granules Blend well and mix into appropriate size containers. Cover well All the flavor of butter but the saturated fat is reduced by 50% The lecithin powder or granules is included to give more "fat busting" power to the spread. Use as you would regular butter in any recipe but this spread is not good for frying. It also gets very soft at room temperature. ENJOY! |
